Scope and Contents

The Elsie Maphis Lindsay recipe collection consists of typed and handwritten recipes organized in envelopes bound together in a volume. Recipes for different types of food, usually from a chef at a well-known American hotel, such as New York's Waldorf-Astoria, are printed on the front of each envelope. The majority of the recipes are for desserts and baked goods: included are recipes for a variety of cakes, cookies, icings, puddings, pies; candy; muffins, biscuits, and breads. A few recipes for seafood, ham, steak, soup, egg dishes, vegetables, and salad dressing are also included. Some recipes are written on Daily Progress letterhead and billing forms. Also included are a list of recommended menus for children of various ages; an issue of the Calumet Baking Powder Company's "Home & Kitchen Suggestions" newsletter, with suggested luncheon menus; clippings; and recipes from Kingan's Reliable Hams and from the Edison Electric Appliance Company.
